I have downloaded the Monero official wallet. And I am at the synchronizing part and it seems like it's gonna take 8 days to fully synchronize so that I can start using it...
I am considering downloading it without Tor. Is this recommended? I know Monero does something to prevent your IP being associated with transactions, but how secure is this and will not using Tor with the wallet bite me in the ass someday?
I don't want to use remote nodes. I want to use a local node. I currently have my monero stored in various exchange wallets, but I need a local node so I can put all my shit

If you are planning to run your local node, the main sync makes little difference if it's over Tor or not. Just make sure when it's finished syncing you don't send transactions onto the network without protecting your IP.

Is there any downside to running a full node on a AWS VPS and then using that node as a remote node for Monero wallet running over Tor?
The reason that I suggest this is because it will get me up and running faster. A VPS will probably have the full node up and running in a few hours. Whereas, downloading the full node on my actual connection is gonna take a couple days.

You can download the whole blockchain from their site directly. I think it could be faster, onion site is available, too.
https://www.getmonero.org/downloads/
If you surf via TOR-Browser on this site, you are gonna be redirected to the onion site.
Scroll down - you will see "Import Blockchain" -> download that and put it into the correct directory and restart the node -> Done.

AWS VPS -> follow the money -> you are fucked.
If Dandeleon++ has an issue -> AWD VPS -> follow the money -> your are fucked.
There is a reason, why monero people are running remote nodes, notes through tor, notes through i2p. ;)
So again, like DeSnake said: "Never rely on a single security layer."
-> use Dandelion ++ Protocol -> it is active by default
AND
-> run a node via TOR or other extra security layers - it is highly recommended.

What you are looking for is the Dandelion ++ Protocol.

This source is a bit old but it is the foundation of what you are looking for.
And as DeSnake said: Never rely on a single security layer.
So: Yes, Dandelion++ is nice and it works well. It is standard by default, nothing to do for you. But if you have the ability to send your transaction via a node within or via TOR or other extra security layers - it is highly recommended.
